  1. Let the Pastry bake

    Place your gluten-free puff pastry on a baking tray lined with baking paper. Use a fork to poke holes all over it to stop it from puffing up.
    Put another sheet of baking paper on top, then place another tray on top to keep it flat.
    Bake for 15–20 minutes or until it looks golden and feels crispy. Let it cool down, then cut it into two equal squares or rectangles to fit your slice tin.

    Add the milk, cream, and vanilla into a saucepan and set it over medium heat. Warm it up until it’s steaming, but be careful not to let it boil.
    While that’s heating, grab a mixing bowl and whisk together the sugar, cornflour, plain flour, and egg yolks until smooth.
    Once the milk mixture is hot, slowly put it into the mixture while whisking constantly. This step is essential—it helps warm up the eggs gently so they don’t scramble.
    Pour everything back into the saucepan and keep whisking over medium heat. After about 5 to 8 minutes, it should thicken into a smooth custard.
    Now leave it from the heat and stir in the butter until it’s completely melted and the custard is silky smooth.

    Cover the tin and place it in the refrigerator for at least 3–4 hours, or overnight, until the custard has set.

    In a mixing bowl, combine icing sugar with just enough milk to make a thick but smooth icing that’s easy to spread.

    For an extra flavor, you can stir in a little vanilla extract or some passionfruit pulp, if you prefer.

    Once the slice has set, gently spread the icing over the top layer of pastry.

    Pop it back into the fridge for another 20–30 minutes so the icing can firm up.
